The team behind Penicillin and Tell Camellia opened Courtroom on the steep slope of Graham Street, and the technical ambition shows: house-made guava and mango wine, rose petal vinegar standing in for vermouth, fennel distillate turning up where you least expect it. Complex builds that somehow still taste like drinks, not experiments.
