Cypsèle is a tasting-menu restaurant in the Marais, set among restored 17th-century apothecary shelves, with a neon sign that looks borrowed from the tabac down the street. The open kitchen at the back turns out seven courses of seasonal French cooking with a Sweden-to-Japan accent, and the menu changes daily. It's a splurge for people who read menus like novels. The Infatuation named it one of the best new restaurants in Paris.
