A milky, collagen-rich broth loaded with beef knee cartilage, tendon, and shank: doganitang is the whole point here, and Daesungjip has been doing it the same way forever. The soup arrives clean and subtly sweet, with a silky body that comes from properly emulsified fat rather than any trick. Sharp kimchi and kkakdugi on the side, fluffy rice, old-school hospitality. A Michelin Bib Gourmand Korean soup house where the owner still runs the ladle.
