A dike-village restaurant on the edge of Amsterdam where you're quietly encouraged to ditch your car and walk in, letting the setting do its work before you've ordered anything. Inside, the old building wears its age naturally, and the terrace looks straight out across the water. The kitchen builds each plate around three ingredients, often passed through wood fire.
