    The buttermilk pancakes here have a firm, golden exterior with a pillowy interior, and the kitchen sends them out with salted clarified butter that makes the whole thing feel like a considered decision. Du-par's is a classic American diner, been around forever, tucked inside the Original Farmers Market on Fairfax. It serves breakfast into evening, which is the kind of flexibility a pancake this good earns.
