Dukes runs a high-volume operation without the usual trade-off in care, moving a crowd of laptop workers and lunchtime regulars through espresso blends and single-origin filters at a pace that would make lesser cafes wobble. Ethical sourcing is taken seriously here, which in Melbourne is less a differentiator than a minimum requirement, but they do it well.
