A stately 19th-century mansion that did time as a convent and a police station before becoming a boutique hotel, Edgar sits a few blocks from Saint-Brieuc's Gothic cathedral. Original wood floors and mansard-roofed attic suites with sloping ceilings carry the period bones, while boldly patterned wallpaper and big walk-in showers keep the rooms squarely modern. A glass-roofed restaurant and a small spa with a hammam round things out nicely.
