    Rustic Mexican

    Sheep and goat wrapped in maguey leaves, buried underground with coals, and slow-roasted overnight in Hidalgo state, then trucked into Roma Sur every weekend. This two-story barbacoa shop is only open Friday through Sunday, which concentrates the crowd accordingly. The sturdy wooden tables and colorful runners make it relatively dressy by barbacoa standards, which is to say you won't be eating off a folding table. Order by weight and start with the consommé.
