The cochinita pibil comes out electric orange from achiote, and it will absolutely stain your shirt. El Turix is a bare-bones Yucatan taqueria in Polanco with a steel counter, no real seating, and a line that parks itself outside regardless. The slow-roasted pork lands on panuchos or in tacos, topped with pickled red onion. Office workers in loosened ties eat next to construction crews, which is about as reliable a quality signal as any.
