Ring the bell on a narrow downtown Porto street and the door opens onto a counter-facing-kitchen setup that reads more Tokyo izakaya than Portuguese dining room. Vasco Coelho Santos runs a Michelin-starred tasting menu here, built around charcoal, smoke, and aged fish from his own fishmongers, many pulled from Azorean waters. The chefs cook in front of you and always slip in a dish that never appears on the menu, which keeps everyone guessing.
