Four communal tables, no sign, no menu, cash only, and a Michelin star. The math at this Roma Norte sidewalk spot is its own argument. The kitchen runs on heirloom corn nixtamalized and ground in house, and whatever lands in front of you, tortillas or huaraches or sopes, gets shaped and griddled to order before disappearing under seasonal sauces. The tableside salsas arrive with serious intent. No reservations, and the waitlist moves at its own pace.
