Fearing's

Dean Fearing's restaurant inside the Ritz-Carlton looks like a traditional steakhouse until the food arrives. It's a polished Southwestern dining room where the menu wanders confidently into buffalo and antelope territory alongside filets, and a carpaccio riff assembles tuna, wagyu, salmon, and barbecued eel into something resembling stained glass. The kind of place that earns a Forbes Four Star and still manages to serve a baklava s'more without embarrassing itself.
