This Sichuan and Hunan restaurant on the fifth floor of StarWorld holds two Michelin stars, and the chef has been making trips to both provinces for decades to source the right chillies and peppercorns. The red-and-gold dining room is formal enough to dress for, and the food calibrates heat with a precision that makes spice feel like an argument, not a threat.
