This is formal French fine dining perched atop the Grand Lisboa, the kind of room where dessert still arrives by trolley and the wine cellar runs to nearly 18,000 labels. The chef trained for 25 years under Joël Robuchon, and the kitchen holds three Michelin stars and a Forbes Five Star. The philosophy: no plate carries more than three distinct flavors.
