    The name is a double meaning: FIEF stands for "Made Here In France," and the kitchen takes that as a hard rule, sourcing every ingredient from within the country's borders. Sichuan pepper from Gers, yuzu from Montpellier, miso from Burgundy. It's a Michelin-starred modern French restaurant in the 11th, and counter seating puts you close enough to hear the team narrate each plate as it lands.
