  1. Patio tables beside the wine store are gone before you think to ask, which tells you something about this cosy gastro bistro in Nijmegen. The kitchen leans hard into plant-forward cooking, drying beef heart in koji and shaving it over meat, or coaxing carrots and beetroot into something that reads as charcuterie. Natural wines fill the list. The chef's instincts run a little unsettling, in the best possible sense of the word.
