The gaucho trick of skewering meat on wooden stakes around an open fire is the whole founding idea here, and Fogo de Chão has been running with it ever since. It's a full-on churrascaria: passadores circulate with swords of beef, lamb, and pork in the classic rodizio format, while a sprawling buffet of salads, cheeses, and carpaccios fills the gaps. Dry-aged cuts are available à la carte for the serious-minded.
