    Perched above the Fotografiska gallery, this modern restaurant looks out over Tallinn's Old Town in a way that makes you briefly forget you came for the food. The kitchen runs a leaf-to-root, nose-to-tail philosophy with enough conviction that vegetable trim ends up as cocktail garnish rather than compost. The cooking is original enough to earn a Michelin Bib Gourmand, and the rooftop bar makes a strong case for arriving early.
