Coastal New American
A bright pink entrance fronted by a waterfall does most of the first-impression work here, which is fortunate, because Richard Blais's coastal New American restaurant inside the Hyatt Regency Grand Cypress has a lot to live up to. Warm wood, big windows, and tropical color keep the room unhurried. The menu leans into that mood, mixing seasonal American cooking with tropics-leaning flavors in ways that read as festive without tipping into theme-park territory.
