A hanok tucked into Insadong's back lanes, this dumpling shop has built its whole identity around gaeseong-style mandu, using a grandmother's recipe and dough that ferments for three hours before it's ever wrapped. The broth simmers most of the day and arrives cloudy and quietly savory without leaning on seasoning to prove anything. Mul-kimchi and kkakdugi come alongside. The Michelin Guide awarded it a Bib Gourmand, which tracks with the unhurried, no-frills sincerity of the place.
