A converted shop in Santiago's old town, Gaio runs on sharing plates built from Galician seasonal produce and pulled in several directions at once, Peruvian and Asian among them. The open kitchen sits behind a dining counter, the mood is low-key, and the menu quietly credits the chef's grandmother and aunt as its origin story. Charcoal-grilled chicken with Chinese cabbage turns up alongside mackerel with grapes, which is a combination you don't see everywhere.
