Ghumeli is a modern Georgian restaurant on the top floor of a Tbilisi hotel, built around a stone oven in the middle of the dining room, so dinner doubles as a cooking demonstration you didn't ask for. Khachapuri and khinkali show up in reworked shapes that would confuse a grandmother and probably delight her. In warm weather the roof rolls back over views of Old Tbilisi. It holds one Gault&Millau toque.
