This is a formal kaiseki restaurant in Ginza, and the chef's entire menu orbits his home prefecture of Shizuoka, from the water poured at the table to the fish pulled from Suruga Bay. Two Michelin stars. The Paris outpost suggests someone with a genuine missionary streak, not just a local favorite who got lucky.
