    The outdoor ice rink appears only when the weather cooperates, which is a charming way for a luxury hotel to hedge its bets. Grand Hyatt Seoul is a full-scale city resort on a hillside in Yongsan, with nine dining and entertainment venues, a spa, and Club Olympus, a sprawling 24-hour fitness complex with indoor and outdoor pools, squash and tennis courts. Rooms are understated but comfortable, with full-length windows framing either the city or the mountains.
