The name comes from the chef's own daily-ground spice mix, which sets the tone for this small, loud Indian small-plates restaurant in Spitalfields. Ten tightly packed tables fill fast with people who look like they've been coming for years. The menu pulls from family recipes across India's regions, and the Michelin Guide gave it a Bib Gourmand, which tracks. It spawned other London locations, but this is the one that started it.
