Bonito is shaved and dashi drawn tableside, which tells you something about how seriously this Minami-Aoyama kaiseki restaurant takes the gap between "just made" and "good enough." The name is a Zen phrase for a cloud drifting without attachment, and the kitchen seems to take that literally, bending tradition toward char-grilled beef and straw-roasted game without announcing it as a departure. Two Michelin stars.
