    Gomtang is the whole menu here, and the kitchen commits to it completely, using only heifer hanwoo beef for a broth that stays delicate rather than heavy. You choose clear meat broth or rich bone broth, then get a bowl loaded with brisket, chuck, and knee joint. The kimchi and banchan arrive in hand-forged bronze tableware, which feels like a quiet flex for a soup shop. The Michelin Guide awards it a Bib Gourmand.
