The kitchen runs a broad à la carte of tapas, small plates, vegetables from Aranjuez and Bizkaia, Cantabrian fish, and good cuts of meat. The Zalla red onion tarte tatin keeps coming up in conversation for a reason. Madrid with a northern accent, and no performance about it.
