On the 28th floor of SKY Towers, this Michelin-starred fine dining room sits higher than any restaurant in Belgium, with floor-to-ceiling views over the North Sea that turn theatrical at sunset. The chef's cooking runs on the same logic: French technique, Japanese inflection, and ingredients from the coastline just below the window. Dashi made from the fish's own bones is a signature move here.
