Wood-fired ovens and a charcoal grill do most of the talking at this hotel steakhouse on the fifth floor of Rosewood Hong Kong, where dry-aged heritage-breed beef arrives tableside, sometimes flambéed in whisky, which is exactly as theatrical as it sounds. The menu runs from crab cocktail and lobster bisque through to tomahawk and Wagyu A5, and the smoky cocktail list, Cowboy Old Fashioned included, keeps the whole protein-forward evening on theme.
