  1. The name means "pure" or "immaculate," and the all-white room makes the point before anything arrives at the table. This is a Michelin-starred Japanese kaiseki restaurant where the chef still sources crab, abalone, and sea perch from the fishmonger back in Shimane Prefecture where he trained. The meal closes with takikomi-gohan, then somen or curry to settle the palate, a traditional arc delivered with enough quiet wit that it never feels like a lecture.
