  1. A two-Michelin-star kaiseki restaurant in Higashiyama where the menu changes monthly and the chef shapes every detail around whatever the day's market yielded. The philosophy is shuhari, the classical Japanese progression from mastering tradition to breaking it to forging something new. The result is a meal that moves in step with the season, so no two visits are quite the same, which is either charming or anxiety-inducing depending on your relationship with menus.
