The restaurant takes its name from the slope outside, said to have been carved by wandering mountain ascetics. Inside, a Japanese kaiseki kitchen runs on the philosophy of Sen-no-Rikyu, the tea ceremony master whose four principles, harmony, respect, purity, and tranquillity, turn out to work just as well as a recipe for cooking as for life. The menu draws on generations of tradition, with the chef quietly bending the form without breaking it.
