  1. A sushi counter in Mita where the thick-cut nigiri is almost a statement of intent: no precious slivers here. The chef behind Sushi Hashimoto opened this as a training ground of sorts, a place for his young protégés to find their footing while he quietly keeps watch. Lunch is nigiri only; evenings add side dishes. The service is formal without being stiff, which is its own kind of skill to develop.
