    A fine-dining restaurant inside the InterContinental Phuket that looks like a Thai temple and serves Portuguese food, which tells you something about the ambition level here. The chef came up through Potong in Bangkok and Ikoyi in London, and the cooking leans hard into fermentation, the kind of bold, funky flavors that make you want to interrogate the menu. Kamala Beach outside, something considerably more serious within.
