Two 19th-century palacete buildings stitched together and quietly turned into a boutique luxury hotel, selected by the Michelin Guide. A full recent renovation stripped out all the usual Regency fussiness and replaced it with pale woods, sliding bathroom doors, and a basement spa with a plunge pool carved into dark stone. Sixty-six rooms around central courtyards make it feel less like a city hotel than a resort, which is a neat trick in the middle of Valencia.
