    The building spent decades sending emigrants across the Atlantic as the Holland America Line's headquarters, and the red-brick Jugendstil bones are still very much the point. This boutique hotel in Rotterdam's Kop van Zuid keeps the old boardrooms as suites, the harbor views from the Tower Rooms are genuine, and the oyster bar downstairs makes a strong case for never leaving.
