This Michelin-starred restaurant in Ixelles has been doing zero-waste, micro-seasonal vegetable cooking since well before it was a dinner-party talking point. The sommelière runs a beverage program serious enough to match the kitchen, and the whole operation publishes a sustainability report, because of course it does.
