A 22-seat counter tucked inside Gui Steakhouse, up an elevator and easy to walk past without knowing. Sungchul Shim runs a multicourse tasting menu where Korean flavors meet French technique, and the two Michelin stars suggest the kitchen takes that fusion seriously. Chefs work at the center of the room in full view, which keeps everyone facing the same direction for once. The white soy custard with Osetra caviar has developed a following of its own.
