The entrance bar still does pinchos to order with an informal glass of wine, but downstairs is a different proposition: a small basement dining room with six oversized tables, each with its own cupboard, built for the kind of attention that a Michelin-starred tasting menu requires. Paulo Airaudo's kitchen stays close to classic Basque cooking, grilled prawns, rock fish soup, kokotxas done three ways. The full wine list is available by the glass, which is either generous or dangerous, depending on the table.
