An open kitchen inside the grand Hotel Maria Cristina, where Argentine chef Paulo Airaudo runs a two-Michelin-starred tasting menu he calls an Italian omakase, drawing the Cantabrian Sea through a Japanese lens. The bar is a serious part of the experience, not an afterthought, and the single seasonal menu comes with a pairing option that can go alcohol-free. Elegant without being stiff, and genuinely hard to categorize, which seems to be the point.
