The ground-floor pintxo bar is a scrum of tourists and locals, but upstairs the dining room gets quieter and more composed. This is a full sit-down restaurant in the old quarter, where the kitchen puts traditional Basque cooking through a careful, market-driven update. Grilled flatfish, kokotxas done three ways, and whatever looked good at the market that morning are the reasons to climb the stairs.
