    Carved into the caldera rim at Imerovigli, this boutique cave hotel digs its suites into the volcanic rock face, with polished cement floors, Coco-Mat beds, and private jetted pools cut from the bedrock in the upper categories. An 11-metre saltwater infinity pool bleeds into the Aegean at one end. Each evening a biscuit arrives with a philosopher's quotation, which is either charming or a lot, depending on the day.
