Five Georgian townhouses on George Street, joined together and dressed up over the centuries into one of Edinburgh's grand old hotels. A recent refurbishment leaned into the oak, marble, and leather rather than away from them, with a color palette pulled from 19th-century Scottish landscape painting. No spa, but the ground floor runs to a steakhouse, a bar, and a café, which covers most emergencies.
