    A fried pizza shop in Rione Sanità run entirely by women, which tells you something about the care and organization before you even sit down. The dark couches and clean interior land somewhere between neighborhood spot and something more considered. The dough comes out uniformly golden and dry, never greasy, stuffed with ricotta, provola, and cicoli in the classic version. A short but thoughtful wine list means you don't have to drink whatever's closest.
