This is a Japanese dining room where the chef opens by walking guests through seasonal recommendations, and you order from there. The kitchen commits to simple fundamentals, then finds its personality in unexpected pairings, fruit with white sesame, tofu, miso. The menu reads less like a list and more like a conversation.
