A Michelin-starred kaiseki restaurant in a refurbished old house in Kashihara, where the Showa-era bones remain intact. The chef works alone, and the vegetables grown by his father, a landscape architect, do most of the talking. Seasoning steps back to let the produce speak, and the rice dish made with whatever was picked that morning arrives with house-made pickles. Quiet, unhurried, and about as far from performance cooking as you can get.
