A large mural covers one wall of this fusion restaurant near Valencia's Central Market, painted by the chef herself, which tells you something about how she runs the kitchen. Rakel Cernicharo builds a Mediterranean base and pulls from wherever she feels like, organizing the menu around three tiers she's named "from survival to transcendence," which is either very serious or very funny, possibly both.
