  1. A katsuobushi shaver sits at the center of the counter, and everything follows from that. This small set-menu restaurant in Shibuya's basement level is built entirely around bonito, from the grilled fish to shaved flakes over rice to the miso soup drawn from bonito broth. The chef handles the shaver the way a craftsperson handles a good tool, with care and a clear point of view. A Michelin Bib Gourmand.
