The restaurant takes its name from the old Japanese micro-season marking the moment insects stir back to life in early March, which tells you something about how the chef thinks. This is contemporary French cooking shaped by a close attention to what's growing and waking outside, with a single plate often carrying one main ingredient roasted, pureed, and sauced all at once. Yuzu and Japanese pepper quietly move things along with the seasons.
